Yummy desserts go hand-in-hand with Christmas festivities. Here's a fabulous recipe for

Pecan Pie

Makes one 9 inch pie. The pie can be made in a cake ring or pie plate. The baking time for the latter
will be about 10 minutes longer. Use all purpose flour for dusting.

6 large eggs
1 1/4 cups light corn syrup
1 1/4 cups packed dark brown sugar
5 Tblsp unsalted butter, melted and cooled
1 Tblsp pure vanilla extract
2 Tblsp fresh lemon juice
1/4 tsp salt
2 1/2 cups coarsely chopped pecans, toasted (about 10 oz.)
2 cups pecan halves, 8 oz.
whipped cream for serving

Set a 9-in. cake ring - 1 1/2 inch sides - on a baking sheet lined with parchment paper--set aside.
On a lightly floured work surface roll out dough to a 13 inch circle. Fit dough into ring, trim edges.
Chill in freezer 30 minutes.

Preheat oven to 400 degrees. Whisk together eggs, syrup and sugar in a medium bowl until smooth. Whisk
in butter, vanilla, lemon juice and salt. Stir in chopped pecans, Pour filling into shell. Arrange pecan
halves on top in concentric circles. Bake, covering with foil after 15 minutes, until filling is set, about
1 hour. Let cool at least 2 hours on a wire rack. Serve with whipped cream.


Tart Shell Dough - for 9 inch pie

1 1/4 cups all purpose flour
1/2 tsp salt
1/2 tsp sugar
8 tblsp cold unsalted butter cut into small pieces
1/4 cup ice water

Process flour, salt, sugar and butter in food processor just until mixture resembles coarse meal, about
10 seconds. With machine running, add ice water. Process just untiil dough starts to come together, no
more than 15 seconds. Turn out dough onto plastic wrap, press into a flat circle, wrap, and regrigerate
30 minutes or up to 2 days.
